Igredients for Bhaaji: -
Butter - 100gms Potatoes - medium size 3 Capsicum - 2 French Beans - 1/4kg Carrot - 1/4kg Cauliflower - 1/4kg Green Peas - 100gms Onion - medium size 2(chopped) Tomatoes - 5 Salt Red chilly powder Turmeric powder Ginger-Garlic paste Pav Bhaaji Masala Corriander and Mint leaves for dressing.
Preparation: -
Wash and cut all the vegetables in one inch size except onion and tomatoes. Pour them in a cooker and add water and little salt to it. Close the lid and cook on high flame till it give 3 alarms then simmer the flame and again let it cook till it gives 3 alarms. Keep the cooker aside. Now take non-stick vessel heat butter in it. Add chopped onions, chopped green chilies (optional) ginger-garlic paste, turmeric pwd; salt accordingly, red chilly pwd. Fry them till the oil starts appearing from the corners. Now add chopped tomatoes (or tomato paste) and fry till oil starts emerging for the corners. Now add the boiled vegetables to it. The vegetables should be tender enough so that when u smash them with the spatula it should become paste. Now stir the paste continiously til the Oil start emerging from the corners now add Pav Bhaaji masala. Bhaaji is ready to serve.
Before serving spinkle lemon juice, chopped onions and chopped mint and coriander leaves.
Server hot with Paav.Slit the pavs horizontally. Slightly toast the pav(burger buns) with butter on a tava
